Yarra Valley VIC
The vineyard is located on the same 1200 acre property where the Pinot Noir is grown. The 18 yr old Shiraz is on the southern side of the farm and sits at 90m elevation, running in a north/south direction. The vineyard is grown on duplex clay loam soils. Handpicked in early March, the Syrah is 100% whole bunch ferment. After picking fruit is then sorted before being put into the fermenter. No plunging or pumping is done but a gentle foot stomp helps to release some juice and commence the wild yeast ferment. No sulphur was used or other additions were made during the fermentation process. The fruit is left untouched for 3-4 weeks and then pressed off. Aged in 3 year old French oak Barriques for 9 months before bottling. The 2017 Syrah shows dark fruit and spices with some dried herb notes. Defined tannins and acidity make this a very lively and structural wine.
